Client's Challenge

Viva Brazil, a high-volume Brazilian restaurant located in Cardiff City Centre, required a full professional kitchen deep clean following a busy trading period.

To meet food safety requirements and maintain compliance with TR19 ventilation hygiene guidance, the client required specialist cleaning of their commercial kitchen extraction system, including ductwork and fans, alongside a full hygiene reset across kitchen surfaces, equipment, floors, ovens and drainage systems.

The works needed to be delivered within a restricted operational window to minimise downtime and allow the restaurant to return to service quickly, without compromising hygiene standards or compliance obligations.

Assessment & Planning  

Prior to mobilisation, APT ICC reviewed the existing kitchen condition
and the client’s cleaning procedures to identify areas of grease build-up,
hygiene risk and ventilation contamination.

Planning focused on:

• TR19-compliant extraction cleaning methodology
• Safe degreasing and sanitisation within a food environment
• Sequencing works to minimise operational downtime
• Ensuring all chemicals used were food-safe and appropriate
• Supporting the client with improved ongoing hygiene practices

APT ICC also provided guidance on cleaning frequency, product selection and best-practice procedures to support long-term compliance beyond the deep clean.

Methodology

The kitchen deep cleaning and extraction works were delivered using a structured, compliance-led approach:

1. Extraction system strip-down and cleaning
Extraction fans and accessible ductwork components were removed where required, thoroughly cleaned, sanitised and reinstated.

2. Degreasing and sanitisation of kitchen equipment and surfaces
Stainless steel surfaces, food prep areas and high-touch points were deep cleaned and sanitised to remove grease build-up and reduce cross-contamination risk.

3. Floor deep cleaning and steam cleaning
Kitchen floors were treated with food-safe chemicals and steam cleaned to lift embedded grease and grime.

4. Oven and drainage degreasing
Ovens were treated for baked-on carbon removal, while drains and waste systems were degreased to reduce odour and blockage risks.

5. Compliance close-out and hygiene support
On completion, certification was issued where applicable and a structured maintenance cleaning programme was provided to support ongoing compliance.
