COMMERCIAL KITCHEN CLEANING & TR19 CERTIFICATION

Client's Challenge

Future Inn Cardiff contacted APT ICC to carry out a commercial kitchen deep clean and formal TR19 inspection and certification to ensure compliance with food hygiene and fire safety requirements.

Grease and residue build-up within the kitchen canopy, cooker hood, and associated ducting posed hygiene, fire risk, and compliance concerns. The client required a specialist contractor capable of delivering both the physical cleaning works and the associated inspection, reporting, and certification, without disrupting hotel operations.

The objective was to return the kitchen to a clean, compliant condition supported by full TR19 documentation.

Assessment & Planning  

APT ICC met with the client on site to review the kitchen ventilation system and assess the condition of the canopy, cooker hood, and ducting.

During this visit, the ducting layout was fully mapped to support TR19 reporting requirements. Grease thickness levels were measured, access points identified, and system configuration recorded. The proposed cleaning method, expected results, and reporting process were discussed and agreed in advance.

This planning stage ensured the works and the resulting TR19 report accurately reflected the system condition and compliance requirements.

Methodology

APT ICC delivered the works using a structured, auditable TR19 cleaning and certification process.

The approach focused on effective grease removal, accurate measurement, and compliance-led documentation. The works were carried out as follows:

1. Establishment of controlled work zones and protection of kitchen equipment.

2. Pre-clean grease thickness measurement and photographic documentation.

3. Application of food-safe degreasers selected based on contamination levels.

4. Manual and mechanical cleaning of the canopy, cooker hood, and ducting using brushes, scrapers, cloths, and washers.

5. Thorough rinsing of all treated surfaces.

6. Final sanitisation using Ultraclean MB to achieve a hygienic finish.

7. Post-clean inspection, re-measurement, and photographic evidence capture.

8. Completion of a full TR19 report, including duct layout, grease measurements, and certification.

Any areas requiring further attention were recorded within the final TR19 documentation.
