Client's Challenge

Atlantic College required a professional commercial kitchen cleaning contractor to deep clean its canteen and kitchen facilities, restoring hygiene standards and ensuring the environment was safe for staff and students.

As a busy residential education site, the kitchen had developed built-up grease, cooking residues, and general soiling across preparation areas, equipment, and high-touch surfaces. While routine cleaning was in place, a specialist deep clean was required to reset hygiene standards, improve presentation, and support continued food-safe operation.

The client required a contractor experienced in education catering environments, capable of delivering a controlled, food-safe deep clean without disrupting ongoing site operations.

Assessment & Planning  

APT ICC carried out a practical site assessment prior to works
commencing, focusing on:

• Areas of heavy grease and residue build-up
• High-risk food contact and preparation surfaces
• Fixed and hard-to-access equipment zones
• Oven and high-temperature cooking equipment
• Hygiene flow and sequencing to avoid cross-contamination

A structured cleaning plan was developed to ensure the canteen and kitchen were cleaned methodically from heavy-degrease areas through to final sanitisation, aligning with best practice for commercial kitchen hygiene within education settings.

Methodology

The commercial kitchen and canteen deep clean was completed using a structured, hygiene-led approach:

1. Section-by-section cleaning to maintain control and reduce cross-contamination risk

2. Initial scrape-down and wipe-down to remove loose debris and surface residues

3. Targeted heavy degreasing of preparation surfaces, equipment contact points, and service areas

4. Deep oven cleaning using specialist oven-cleaning chemistry to remove baked-on grease and carbon deposits

5. Cleaning behind and around fixed equipment, including under-counter and service/till-style zones where applicable

6. Rinse-down and controlled residue removal to leave food-safe surfaces

7. Final sanitisation and odour neutralisation to leave the kitchen clean, hygienic, and fresh

This method ensured a thorough deep clean while maintaining food safety and operational readiness.
