Project: Commercial Kitchen Deep Cleaning
APT were called at short notice and given two weeks to complete the project; it was normally a planned cleaning programme spanning over three weeks. The clients previous deep cleaning company had declined the project at the last minute.
Seven large commercial kitchens and five additional food serving areas required deep cleaning and sanitising, this included all areas in the kitchen; large cooker hoods, ovens, internal and external ductwork, aluminium filters, walls, floors, cupboards, utensils, all crockery and copper pans.
A thorough analysis was conducted by our hygiene surveyor, in order to establish the severity of the clean and the colleges working practices.
APT specialist hygiene division team took up the task of the kitchen deep cleaning and the high-level duct work which included the difficult ventilation cleaning. To complete the works, we implemented long working shifts and out of hours working to accommodate the tight schedule.
APT’s Metasoak Safe Aluminium Cleaner was used to clean the aluminium cooker filters, copper pots, pans and remove baked on carbon and grease from deep fat fryers – this product is safe to use and will not affect the surfaces. APT’s specialist cleaner and sanitiser, Ultramax MB was used to clean stainless steel, all hard surfaces and the commercial oven cleaners. We unblocked the drains and cleared the grease traps with Destroy II fat and grease digester.
The task was completed on time and with great customer feedback received from the client College Services Manager Mark Duthy. They had the highest accreditation for their annual hygiene inspection and passed with flying colours.
